Fifty/Fifty American Whiskey, batches 1-4: This American whiskey is aged for over 7 months in 5 gallon oak barrels. Like the unaged version, this whiskey is our tribute to the mix of Scotch whisky and American whiskey influences, as it embraces both sides of the Barley / Rye divide. Also using Pacific Northwest-grown barley, the flavor profile plays with the oak aging to impart more complex notes in the final result. Batches 5 and on can be found here
Tasting notes:
Also proofed at 92 (46% alcohol by volume) this aged American whiskey presents with a complex caramel and spiciness on the nose. It presents with a creamy mouthfeel and mild smoke on the palate. Bookended with mint, eucalyptus, and crisp spice, a warm and smooth chocolate malt middle balances the complexity of this whiskey to appeal to both the Scotch whisky and American whiskey palates.

New Make Fifty/Fifty American Whiskey: like the Oregon Single Malt, this new-make American whiskey is an unaged whiskey. It stands as our tribute to the mix of Scotch whisky and American whiskey influences, as it embraces both sides of the Barley / Rye divide. Using Pacific Northwest-grown barley, the flavors stand up to the spicier rye grain and provide a unique balance to create a complex and spicier version of our Oregon Single Malt.
Tasting notes:
Also proofed at 92 (46% alcohol by volume) this new make presents with a complex spiciness from the rye balanced by the subtle sweetness of the malted barley. With almost a whisper of smoke and earthiness, this whiskey is both tuned to the Scotch whisky and American whiskey palates.
